Place the soya chunks in a heatproof bowl. Add 1 teaspoon of salt and cover with hot water. Let them soak for 20 minutes.

While the soya chunks are soaking, prepare the chilli paste. In a blender, combine the garlic cloves, soaked dry Kashmiri red chili, 1/2 teaspoon salt, and 1/3 cup water. Blend until a smooth paste forms. Set aside.

After 20 minutes, drain the soaked soya chunks and gently squeeze out any excess water. Transfer them to a mixing bowl.

To the squeezed soya chunks, add 2 teaspoons salt, 1 teaspoon chaat masala, 1/2 tablespoon paprika powder, 2 teaspoons cumin-coriander powder, 1/2 tablespoon garlic powder, and 1 1/2 tablespoons rice flour. Mix thoroughly to ensure all the spices coat the soya chunks evenly. Marinate for at least 20 minutes.

Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the marinated soya chunks and toss them until they become slightly crispy and golden brown. This should take about 8-10 minutes. Remove the crispy soya from the pan and set aside.

In the same pan, add 1 1/2 tablespoons of extra virgin olive oil. Add the finely chopped onion and sauté until it turns translucent, about 3-5 minutes.

Stir in the prepared chilli paste and cook for 2-3 minutes until fragrant.

Add 2 1/2 cups water, 1 1/2 tablespoons tomato ketchup, 1 teaspoon dark soy sauce, and 1/2 tablespoon honey to the pan. Mix all ingredients well and bring to a gentle simmer.

In a separate small bowl, whisk together 1 tablespoon corn flour and 1/3 cup water to form a smooth slurry.

Gradually pour the corn flour slurry into the simmering sauce in the pan, stirring continuously until the sauce thickens to your desired consistency.

Once the sauce has thickened, add the previously sautéed crispy soya chunks back into the pan. Toss to ensure the soya chunks are fully coated with the sauce.

Garnish the Chilli Garlic Soya with 1/3 cup spring onion greens and 1/2 tablespoon white sesame seeds. Serve hot with Basil Corn Rice (recipe for Basil Corn Rice not included in this document).
