Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easier cleanup.

Prepare the carrots: Trim the ends of the carrots. To create rustic, irregular chunks, cut each carrot on a diagonal, then roll it 90 degrees and cut again, repeating this process along the length of the carrot.

On the prepared baking sheet, combine the cut carrots, olive oil, salt, 3 tablespoons of pure maple syrup, and fresh thyme sprigs. Toss everything thoroughly with your hands to ensure the carrots are evenly coated.

Spread the carrots in a single layer on the baking sheet. Roast in the preheated oven for 40 minutes, or until the carrots are tender, caramelized, and slightly browned at the edges. Flip them halfway through cooking for even caramelization.

While the carrots are roasting, prepare the spicy maple glaze. In a small bowl, whisk together the Gochujang and 1 teaspoon of pure maple syrup until smooth and well combined.

Once roasted, carefully remove the baking sheet from the oven. Discard the thyme sprigs.

Transfer the caramelized carrots to a serving bowl. Drizzle the prepared spicy maple glaze generously over the carrots. Toss gently to coat.

Sprinkle with everything bagel seasoning and, if desired, finely chopped fresh parsley before serving immediately.
