Soak the fine bulgur with hot water and mix. Cover and let it rest for 10-15 minutes.

To the rested bulgur, add red pepper paste, tomato paste, salt, black pepper, cumin, finely chopped onion, and crushed garlic.

Knead the bulgur well with your hands for a few minutes until it softens and loses its firmness.

Add the finely chopped green onion and parsley.

Finely chop the red cabbage, rub it well with some lemon juice, and add it to the mixture.

Add the pomegranate molasses and the remaining lemon juice, then knead again.

Heat the olive oil well in a pan and drizzle it over the kısır.

Do not knead after this step; just mix to incorporate the olive oil.

Taste and add more lemon juice, pomegranate molasses, or spices as desired.

Serve with lettuce leaves.
