Chop the 3 large sweet potatoes into small, even cubes. Place the cubed sweet potatoes in a large bowl.

Add 1 tablespoon of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of paprika to the bowl with the sweet potatoes. Toss until the sweet potatoes are evenly coated with the seasonings.

Spread the seasoned sweet potato cubes on the prepared baking sheet, ensuring they are in a single layer and face down for optimal caramelization.

Bake the sweet potatoes for 20-25 minutes, or until they are tender and perfectly caramelized. Flip them halfway through if desired for even browning.

While the sweet potatoes are baking, prepare the filling. In a large pan, cook the 1 pound of ground turkey over medium-high heat until it is browned, breaking it up as it cooks.

Drain any excess fat from the pan. Add the 1/2 diced onion and 1 diced jalapeño to the pan with the turkey. Cook for 5 minutes, stirring occasionally, until the vegetables have softened.

Stir in the 1 cup of corn, 1 can of rinsed and drained black beans, and 1/2 cup of salsa. Simmer the mixture for 5 minutes to allow the flavors to meld.

While the filling simmers, prepare the cilantro lime rice. Cook 1 cup of rice according to the package directions, using 1 1/2 cups of chicken broth and 1/4 cup of water instead of plain water.

Once the rice is cooked, stir in 1 tablespoon of lime juice and 1/4 cup of chopped cilantro.
To assemble the bowls, divide the cooked sweet potatoes among 4 bowls. Add a serving of the cilantro lime rice to each bowl.

Top with a generous amount of the ground turkey mixture. Garnish each bowl with 2 tablespoons of sour cream and 1/4 cup of shredded cheese, or any other desired toppings such as additional cilantro or sliced avocado.
