To prepare the marinade, combine the chipotle peppers in adobo, 1/2 cup avocado oil, 1/4 cup orange juice, 1/2 cup cilantro, 5 garlic cloves, 1 tablespoon cumin, 2 tablespoons lime juice, 1 tablespoon soy sauce, 1 teaspoon salt, and 1/4 teaspoon cinnamon in a blender. Blend until smooth.

Place the skirt steak in a shallow dish or a resealable bag. Pour the prepared marinade over the steak, ensuring it's fully coated. Cover and refrigerate to marinate overnight (minimum 8 hours, up to 12 hours).

When ready to cook, remove the steak from the refrigerator and let it come to room temperature for about 30 minutes. Heat a heavy-bottomed skillet or grill pan over high heat until very hot.

Sear the marinated steak for 2 minutes per side for medium-rare, or adjust cooking time to your desired doneness. Work in batches if necessary to avoid overcrowding the pan. Remove from heat and let rest on a cutting board for 5-10 minutes.

While the steak is resting, prepare the cilantro lime rice. In a medium saucepan, combine the 1 cup washed rice, 2 cups water, and 1 teaspoon olive oil. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all water is absorbed.

Once the rice is cooked, remove from heat and fluff with a fork. Stir in the 1/3 cup chopped fresh cilantro, 1/2 teaspoon salt, 1 tablespoon lime juice, and 1 tablespoon lemon juice. Taste and adjust citrus and salt as needed.
Slice the rested steak against the grain into thin strips. Toss the sliced steak with additional fresh lime juice and a sprinkle of fresh cilantro, if desired.

Serve the sliced chipotle carne asada over the prepared cilantro lime rice. Enjoy!
