Add all the whole spices (cinnamon sticks, green cardamom, cloves, black peppercorns, star anise, and fennel seeds) to a dry pan.

Roast the whole spices on low heat for 2 to 3 minutes, or until they become fragrant. Stir occasionally to prevent burning.

Transfer the roasted spices to a plate and allow them to cool completely. This will take approximately 10 minutes.

Once the spices have cooled, transfer them to a grinder along with the dry ginger powder.

Grind the mixture to a fine powder. If desired, you can sieve the powder for an even finer texture.

Store the homemade chai masala in an airtight container. It can be stored for up to 3 months.

To use, add 1/4 teaspoon of the chai masala to your chai while it is brewing for a flavorful cup.
