In a large bowl, combine the all-purpose flour, salt, instant yeast, and sugar. Mix these dry ingredients well to ensure they are evenly distributed.

Add the warm milk and olive oil to the dry ingredients in the bowl. Mix everything together with a spoon or your hands until a shaggy dough forms.

Transfer the shaggy dough to a clean, lightly floured surface. Knead the dough for 8-10 minutes until it becomes smooth, elastic, and no longer sticky.

Lightly oil a clean bowl. Place the kneaded dough in the bowl, turning it once to coat all sides with oil. Cover the bowl with plastic wrap or a clean kitchen towel and let it rest in a warm place for 1 hour, or until the dough has doubled in size.

While the dough is resting, prepare the garlic butter. In a small bowl, combine the melted butter, minced garlic, chili flakes, oregano, and chopped coriander leaves. Mix well and set aside.

Once the dough has risen, gently punch it down to release the air. Transfer the dough to a lightly floured surface and divide it into 12 equal small portions.

Take one portion of dough and flatten it into a small disc. Place a cube of mozzarella cheese in the center of the disc. Bring the edges of the dough together and pinch them securely to seal the cheese inside, forming a small ball. Repeat this process for all remaining dough portions and cheese cubes.

Arrange the dough balls in a round baking dish, leaving a small space between them to allow for expansion. This will create a pull-apart bread effect.

Preheat your oven to 180°C (350°F).

Brush the assembled dough balls generously with the prepared garlic butter, ensuring each bite is well coated.

Bake in the preheated oven for 20-25 minutes, or until the cheesy garlic bites are golden brown and the cheese is melted and bubbly.

Once baked, remove the dish from the oven and serve the cheesy garlic bites hot.
