Place the rinsed sabudana in a medium bowl. Add 1/2 cup of water, ensuring the sabudana is just covered. Let it soak for 2 hours, or until the sabudana pearls are soft and easily mashable.

In a large mixing bowl, thoroughly mash the 2 boiled potatoes until smooth. Add the soaked sabudana (which should be soft and plump) to the mashed potatoes.

To the sabudana and potato mixture, add the cornflour, ginger garlic paste, chopped green chili, cumin powder, red chili powder, and salt. Add the chopped fresh coriander.

Mix all the ingredients thoroughly with your hands until a cohesive, firm dough forms. Ensure everything is well combined.

Take a small portion of the dough (about 1 tablespoon) and gently roll it between your palms, then shape it into a fry-like, finger-shaped piece, approximately 2-3 inches long. Repeat this process with the remaining dough until all the fries are formed.

Heat oil in a deep pan or kadai over medium-high heat for deep frying. The oil should be hot enough (around 350-375°F / 175-190°C) to ensure the fries cook quickly and become crispy without absorbing too much oil. You can test the oil by dropping a tiny piece of dough; it should sizzle and rise to the surface immediately.

Carefully place a batch of sabudana fries into the hot oil, making sure not to overcrowd the pan. Fry them for 3-5 minutes, turning occasionally, until they turn golden brown and become crispy on all sides.

Using a slotted spoon, remove the fried sabudana fries from the oil and transfer them to a plate lined with paper towels to drain any excess oil. Repeat with the remaining batches of fries.

Serve the crispy and yummy Sabudana Fries hot with your favorite chutney or ketchup.
