In a medium saucepan, whisk the milk and sugar together until well combined.

Place the saucepan over medium-low heat. Bring the mixture to a low simmer, whisking often to prevent scorching and ensure even reduction. Continue cooking until the milk has reduced by half, which will take approximately 30 minutes. The mixture will begin to turn a light brown/caramel color during this process.

Once the milk has reduced by half and achieved a slightly thicker consistency and light caramel color, remove the saucepan from the heat.

Immediately stir in the salted butter, vanilla extract, and a pinch of baking soda until all ingredients are fully incorporated. The baking soda helps prevent crystallization and contributes to a smooth texture.

Allow the sweetened condensed milk to cool completely in the saucepan. This can take up to 2 hours at room temperature. It will continue to thicken significantly as it cools.

Once completely cooled, pour the thickened sweetened condensed milk (which will be a light beige liquid) through a funnel into an airtight jar for storage.

Store the airtight jar in the refrigerator. The sweetened condensed milk will continue to thicken further once chilled. This recipe yields approximately 1 1/4 cups and will keep for up to 3 weeks in the fridge.
