Cut the ribeye or sirloin steak into bite-sized cubes. Place the steak cubes in a medium bowl.

Season the steak with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of Italian seasoning. Add 1 tablespoon of olive oil to the bowl. Mix thoroughly until the steak is well coated.

In a large pot, bring generously salted water to a rolling boil. Add the pasta shells and cook according to package directions until al dente. Drain the pasta once cooked and set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot and shimmering, add the seasoned steak cubes in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 3-5 minutes, turning occasionally, until they reach your desired level of doneness. Remove the cooked steak from the pan and set it aside.

In the same skillet (do not clean it), reduce the heat to medium. Add 2 tablespoons of butter. Once the butter has melted, add the 3 cloves of minced garlic to the pan. Sauté the garlic for 1 minute until fragrant, being careful not to burn it.

Pour in 1 1/2 cups of heavy cream. Add 1 teaspoon of Italian seasoning, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir all the sauce ingredients together and let the mixture simmer gently for 5 minutes, stirring occasionally, allowing it to thicken slightly.

Stir in 1/2 cup of grated Parmesan cheese and 1/2 cup of shredded mozzarella cheese into the simmering sauce. Continue stirring until both cheeses are completely melted and the sauce is smooth and creamy.

Add the cooked pasta and the cooked steak back into the skillet with the creamy garlic sauce.

Toss all the ingredients together to ensure the pasta and steak are thoroughly coated in the sauce. Serve immediately, garnished with fresh chopped parsley.
