In a medium bowl, combine the mayonnaise, sweet pickle relish, yellow mustard, white wine vinegar, paprika, onion powder, garlic powder, salt, and black pepper. Mix thoroughly until all ingredients are well combined and the sauce is smooth. Set the Big Mac sauce aside.

Prepare the brioche buns: For each burger, slice one brioche bun into three distinct pieces: a top bun, a middle bun (center slice), and a bottom bun. Lightly brush the cut sides of all three bun slices with melted butter. Toast the buttered bun slices on a hot griddle or in a large skillet over medium heat until golden brown, about 1-2 minutes per side. Set aside.

Prepare the vegetables: Finely dice the white onion and shred the iceberg lettuce. Have the pickle slices ready.

Assemble the Big Mac: Place the bottom bun on a plate. Spread a generous amount of the prepared Big Mac sauce on the bottom bun. Add a layer of diced white onion, followed by a layer of shredded lettuce. Place one slice of American cheese on top of the lettuce and onion (this will be the third slice of cheese for the entire burger). Place one cooked cheeseburger patty on top of the cheese. Carefully place the middle bun on top of the first patty. Spread more Big Mac sauce onto the middle bun. Add another layer of diced white onion and more shredded lettuce. Arrange 3-4 pickle slices on top of the lettuce. Place the second cooked cheeseburger patty on top of the pickles. Finally, place the top bun to complete the burger. Repeat for the remaining burgers and serve immediately.
