Heat a large pan or wok over medium-high heat on the stove.

Add 1 tablespoon of sesame oil to the hot pan.

Add the 150 grams of sliced pork belly to the pan and stir-fry until it is cooked through and lightly browned, about 3-5 minutes.

Add the 1/2 sliced onion to the pan with the pork belly and stir-fry for 1-2 minutes until it starts to soften.

Add the 1/4 sliced cabbage to the pan and continue to stir-fry with the pork and onion until the cabbage is softened, about 3-4 minutes.

Push the pork and vegetables to one side of the pan. Add the 100 grams of yakisoba noodles to the empty side of the pan.

Add a splash of water (about 1-2 tablespoons) directly over the noodles. Cover the pan with a lid and let the noodles steam briefly for 1-2 minutes to soften them.

Remove the lid and use tongs or chopsticks to thoroughly mix the softened noodles with the pork and vegetables in the pan.

In a separate small bowl, combine the sauce ingredients: 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 tablespoon Worcestershire sauce, 1 teaspoon sugar, 1/2 teaspoon chicken powder, and 1 teaspoon sesame oil. Whisk these ingredients well until they are fully combined and the sugar is dissolved.

Pour the prepared sauce evenly over the noodles and vegetables in the pan.

Stir-fry everything together vigorously for 1-2 minutes until the sauce is evenly distributed and coats all the ingredients, ensuring the noodles are well-coated and heated through.

Serve the yakisoba immediately. Optionally, garnish with pickled ginger, sliced green onions, and bonito flakes for added flavor and presentation.
