Preheat your oven to 180°C (350°F). Core and dice the 3 Pink Lady apples, keeping the skin on for added fiber.

Add two-thirds of the diced apples (reserving the remaining one-third for topping) and all the wet ingredients (maple syrup, Greek yoghurt, melted butter, milk, eggs, and vanilla extract) to a single baking dish. Mix thoroughly to combine.

Add the dry ingredients and spices (cinnamon, mixed spice, nutmeg, self-raising flour, and quick oats) to the same baking dish. Mix well until all ingredients are fully incorporated and there are no dry spots.

Evenly spread the mixture in the baking dish and top with the remaining diced apple.

Bake in the preheated oven for 35 minutes, or until the oats are set and the top is golden brown.

Allow the baked oats to cool completely in the baking dish. Once cooled, slice into 9-12 individual portions.

Store the sliced portions in an airtight container in the fridge for easy breakfasts throughout the week. When ready to serve, reheat a portion and add a dollop of Greek yoghurt and a drizzle of maple syrup, if desired.
