Drain the cooked tapioca pearls and rinse under cold water to remove excess starch. In the same saucepan, combine the brown sugar and 1/2 cup water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Add the drained tapioca pearls and the brewed black tea. Simmer for 5 minutes, stirring occasionally, until the syrup thickens slightly and the pearls absorb some flavor. Remove from heat and set aside.

Preheat your oven to 425°F. Lightly grease a 12-inch pizza pan or baking sheet.

Punch down the risen dough and transfer it to the prepared pizza pan. Stretch or roll the dough into a 12-inch circle. In a small bowl, combine the melted butter and 1 teaspoon granulated sugar. Brush this mixture evenly over the edges of the pizza crust.

Spread the softened cream cheese evenly over the pizza dough, leaving a 1/2-inch border for the crust. Sprinkle the shredded mozzarella cheese over the cream cheese layer.

Bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
