Begin by browning the butter for the cookie dough. Melt 170 grams of butter in a saucepan over medium heat. Continue to cook, stirring occasionally, until the butter turns an amber color and smells nutty. Pour the browned butter into a separate bowl and allow it to cool completely.

For the brownie batter, in a large bowl, whisk together 200 grams of granulated sugar, 100 grams of light brown sugar, 113 grams of melted butter (ensure it's warm, not hot), and 55 grams of neutral oil until well combined.

Add 2 eggs, 1 egg yolk, and 1 teaspoon of vanilla to the brownie mixture. Whisk until the mixture is smooth and glossy.

Sift 95 grams of plain flour, 50 grams of unsweetened cocoa powder, and 1/2 teaspoon of salt into the wet brownie ingredients. Gently fold until just combined, being careful not to overmix.

Stir in 180 grams of chopped Oreos and 100 grams of chocolate chips into the brownie batter.

For the cookie dough, in another bowl, whisk together the cooled 170 grams of browned butter, 120 grams of brown sugar, 70 grams of granulated sugar, 1 egg, and 1 teaspoon of vanilla until smooth.

Fold in 240 grams of plain flour, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt into the cookie dough mixture until just combined.

Mix in 100 grams of chocolate chips into the cookie dough. Cover the cookie dough with plastic wrap and chill in the refrigerator for 30–60 minutes.

Preheat your oven to 175°C (350°F). Line a 9x13 inch baking pan with parchment paper.

Pour about 3/4 of the brownie batter into the prepared baking pan and spread it evenly.

Arrange a single layer of whole Oreos over the brownie batter.

Take the chilled cookie dough and break it into irregular chunks. Place these chunks all over the layer of Oreos.

Spoon the remaining brownie batter over the cookie dough chunks, gently spreading it to cover them.

Optionally, top with additional small pieces of cookie dough, crushed Oreos, and more chocolate chips for decoration.

Bake in the preheated oven for 40–45 minutes, or until the cookie dough is golden brown and the brownie is just set with a few moist crumbs when tested with a toothpick.

Remove from the oven and let cool completely before slicing and serving. Enjoy your Oreo Brookies!
