In a medium bowl, combine the paneer squares, yogurt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, chaat masala, salt, and mustard oil. Mix thoroughly until all paneer pieces are well coated.

Let the paneer marinate at room temperature for 15 minutes.

Preheat your dual-zone air fryer. Place the marinated paneer in one basket and the mini pav buns in the second basket.

Set the first zone (for paneer) to 'Air Fry' at 180°C for 12 minutes. Set the second zone (for pav) to 'Bake' at 150°C for 5 minutes. Start the air fryer to cook both simultaneously.

Once cooked, carefully remove the paneer and pav from the air fryer. Slice each mini pav bun in half horizontally.

Spread green chutney on one half of each pav bun and mayonnaise on the other half.

Place a few thin onion rings on the bottom half of each pav, then top with the roasted paneer pieces. Close the slider with the top half of the pav.

Garnish the assembled sliders with fresh chopped coriander leaves and sprinkle additional chaat masala over them before serving.
