To prepare the bulk brownie mix, combine 6 cups of granulated sugar, 2 cups of brown sugar, 4 1/2 cups of all-purpose flour, 3 cups of cocoa powder, and 3 teaspoons of baking powder in a very large bowl. Whisk all dry ingredients together thoroughly until well combined and no lumps remain. This prepared mix can be stored in an airtight container on the shelf for future use.

When ready to bake a batch of brownies, preheat your oven to 350°F. Ensure you have clean pint-sized canning jars ready.

In a large mixing bowl, combine 4 1/2 cups of the prepared bulk brownie mix with 4 eggs, 1 cup of melted butter, and 2 teaspoons of vanilla extract. Mix until all ingredients are just combined and a smooth batter forms.

Carefully fill the pint-sized canning jars with the brownie batter, leaving about 1 inch of headspace. Do not overfill. Place the filled jars (without lids or rings) onto a baking sheet.

Transfer the baking sheet with the filled jars to the preheated oven. Bake for 28-35 minutes. The baking time may vary slightly depending on your oven and the exact size of your jars. The brownies are done when a toothpick inserted into the center comes out with moist crumbs, not wet batter.

Approximately 10 minutes before the brownies are expected to be done, place the metal canning lids (without the screw bands/rings) directly into the oven to heat up. This helps ensure a proper seal.

Once the brownies are baked, carefully remove the jars and the hot lids from the oven. Immediately place a hot lid onto each jar and secure it with a screw band (ring). Tighten the rings firmly. Be extremely cautious as the jars and lids will be piping hot.

Allow the sealed jars to sit undisturbed on your counter for 12-24 hours to cool completely and allow the seals to set. You should hear a 'pop' as the lids seal. Once sealed, the brownies are shelf-stable. To enjoy, simply open a jar, microwave for a short time to warm, and serve with your favorite toppings like ice cream.
