Preheat your oven to 350°F (175°C). Place the taco shells on a baking sheet and set aside to warm later.

Wash the chicken breasts under cold running water. Place them on a clean cutting board and carefully cut them into small, bite-sized cubes.

Peel the onion and chop it into small pieces. Set aside about 1/4 cup of the chopped onion for topping, and the rest will be cooked with the chicken.

Heat the avocado oil in a large frying pan over medium-high heat. Once the oil is shimmering, add the seasoned chicken cubes and the majority of the chopped onions (reserving some for topping). While the chicken is cooking, place the baking sheet with the taco shells into the preheated oven. Heat for 5-7 minutes, or until warmed through and slightly crispy.

Chop the tomatoes and slice the avocado. Prepare the shredded cheese and green creamy sauce for easy assembly.
