Heat a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until it is browned and crisp, about 5-7 minutes. Drain any excess fat.

Add the minced garlic to the pan with the cooked pork and sauté for 1 minute until fragrant.

Pour in the soy sauce, oyster sauce, chili crisp, sesame oil, and granulated sugar. Stir well to combine all ingredients.

Add the chopped green onions (reserving some for garnish) and stir them into the mixture.

Pour in the chicken stock and bring the mixture to a simmer.

Add the udon noodles directly into the pan. If using fresh udon, they will separate easily. If using frozen, they will thaw and separate as they cook. Stir everything together gently to coat the noodles.
