Start by pressing the extra firm tofu to remove excess water. Place the tofu between two plates and weigh down the top plate with something heavy for at least 15-20 minutes. Crumble the pressed tofu into a large bowl.

Add 1 tablespoon of sesame oil, 1 tablespoon of tamari (or soy sauce), 1 tablespoon of rice vinegar, 1 tablespoon of sriracha, 1 teaspoon of grated ginger, and 1 teaspoon of grated garlic to the crumbled tofu.

Incorporate 1/2 cup of shredded carrots, 1/2 cup of chopped green onion, and 1/2 cup of chopped cilantro into the tofu mixture. Mix all the ingredients thoroughly until well combined. Season with salt and pepper to taste.

In a separate bowl, combine 1/2 cup of peanut butter, 1/4 cup of hot water, 1 tablespoon of tamari (or soy sauce), 1 tablespoon of rice vinegar, 1 tablespoon of sriracha, 1 teaspoon of grated ginger, 1 teaspoon of grated garlic, and 1 tablespoon of maple syrup.

Whisk the peanut sauce ingredients together until the sauce is completely smooth and creamy. Set aside.

Prepare a shallow dish of water. Take one rice paper wrapper and submerge it in the water until it becomes soft and pliable, about 15-30 seconds. Be careful not to over-soak, or it will tear easily.

Carefully lay the softened rice paper wrapper flat on a clean surface. Place a spoonful of the prepared tofu filling in the center of the wrapper. Fold the sides of the rice paper wrapper over the filling, then roll it up tightly from the bottom to form a dumpling shape.

Repeat this process with the remaining tofu filling and rice paper wrappers until all filling is used. You may need to work in batches depending on the size of your pan.

Heat a non-stick pan over medium heat with a small amount of oil. Carefully place the assembled rice paper dumplings into the hot pan, ensuring not to overcrowd the pan. Cook the dumplings until they are golden brown and crispy on one side, about 3-5 minutes.

Flip the dumplings and cook the other side until it is also golden brown and crispy, another 3-5 minutes. Continue cooking in batches until all dumplings are done.

Serve the crispy rice paper dumplings immediately while they are hot. Enjoy with the prepared creamy peanut sauce for dipping.
