Preheat your oven to 375°F. Lightly grease an 8x8 inch baking dish.

Steam or boil the cauliflower florets until very tender, about 10-15 minutes. Drain well.

Transfer the cooked cauliflower to a large bowl. Add the softened cream cheese, sour cream, melted butter, garlic powder, onion powder, salt, and black pepper. Mash with a potato masher or use an immersion blender until smooth and creamy.

Stir in 1 cup of the shredded cheddar cheese and half of the crumbled bacon into the mashed cauliflower mixture.

Spoon the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.

Bake for 20-25 minutes, or until the cheese is melted and bubbly and the bake is heated through. For a golden-brown top, you can broil for the last 1-2 minutes, watching carefully to prevent burning.

Remove from the oven and sprinkle with the remaining crumbled bacon and sliced green onions before serving.
