Thoroughly wash the green grapes and remove them from their stems. Ensure they are completely dry.

Place the clean, dry grapes in a single layer on a baking sheet lined with parchment paper, or transfer them to a freezer-safe bag or container. Freeze for at least 4 hours, or until completely solid. For best results, freeze overnight.

Once frozen solid, transfer the grapes to a sturdy food processor. Pulse several times to break them up, then process continuously. You may need to stop and scrape down the sides of the bowl occasionally.

Continue processing until the grapes transform into a smooth, sorbet-like consistency. It will initially look crumbly, then like soft serve ice cream. Do not over-process, or it will melt.

Divide the fresh sorbet among four serving bowls.

Squeeze fresh lime juice over each serving, adjusting the amount to your preference. Sprinkle generously with Tajin Clásico seasoning.
