In a medium bowl, combine the cubed chicken with garlic powder, onion powder, tamari, and cornstarch. Toss until the chicken is evenly coated. Set aside.

In a separate small bowl or measuring cup, whisk together the hoisin sauce, grated ginger, minced garlic, red curry paste, low-sodium soy sauce, honey, and rice vinegar until well combined. This is your sauce.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
