While the woodear is rehydrating, season the 300 grams of prawn meat with 1/4 teaspoon of salt, 1 tablespoon of cornflour, and 1 tablespoon of oil. Mix well to ensure the prawns are evenly coated.

In a small pot of boiling water, cook the 250 grams of raw noodles for 2 minutes or until they reach an al dente texture.

Immediately transfer the cooked noodles to a bowl of cold water to shock them, then drain them thoroughly to prevent them from sticking together.

Heat a wok over medium-high heat. Add 3 tablespoons of oil and the 3 sliced garlic cloves. Fry the garlic for 20 seconds until fragrant.

Add the seasoned 300 grams of prawn meat to the wok. Cook for 1 minute on each side, until they start to turn pink and opaque.

Add the 200 grams of chopped gai lan (or your vegetable of choice) and the rehydrated woodear to the wok. Stir-fry for 2 minutes until the vegetables are slightly tender-crisp.

Add the cooked and drained noodles to the wok, along with the Chow Mein seasoning mixture: 1/4 teaspoon of salt, 1 tablespoon of brown sugar, 1/8 teaspoon of white pepper, 1/2 teaspoon of chicken boullion powder, 1 tablespoon of light soy sauce, and 1 tablespoon of chilli oil/crisp.

Toss all the ingredients together in the wok, cooking until everything is hot and well mixed, ensuring the noodles and vegetables are evenly coated with the seasoning.

Serve the Prawn Chow Mein immediately and enjoy!
