Preheat your oven to 400°F. Line a large baking sheet with parchment paper. In a small bowl, whisk together the granulated sugar and ground cinnamon to make cinnamon sugar. In another small bowl, whisk the large egg with the milk (or water) to create the egg wash.

Lay one sheet of puff pastry on the prepared baking sheet. Use a round pan (like a 9-inch cake tin) as a guide to cut the puff pastry into a perfect circle using a pizza cutter or sharp knife. Remove excess pastry.
