In a medium bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined and smooth. Set aside.

Prepare all the fruit: peel and dice the mango, dice the fresh pineapple, peel and slice the kiwi. If using passion fruit, scoop out the pulp.

To assemble the parfaits, grab four individual serving glasses or jars. Start by spooning about 1/4 cup of the yogurt mixture into the bottom of each glass.

Next, add a layer of mixed tropical fruit over the yogurt. Distribute the mango, pineapple, kiwi, and passion fruit (if using) evenly among the glasses.

Follow with another layer of the yogurt mixture, then another layer of fruit. Repeat until the glasses are full, ending with a layer of yogurt on top.

Garnish each parfait with a sprinkle of granola, shredded coconut, and a pinch of fresh lime zest if desired. Serve immediately or chill until ready to enjoy.
