In a large bowl, combine the halved Brussels sprouts, olive oil, garlic powder, sea salt, and black pepper. Toss well to ensure the Brussels sprouts are evenly coated.

Spread the seasoned Brussels sprouts in a single layer on one side of the prepared baking sheet.

Return to the oven and continue roasting for another 10-15 minutes, or until the Brussels sprouts are tender-crisp and caramelized, and the pork belly is golden brown and crispy.

Carefully remove the baking sheet from the oven. Transfer the roasted pork belly and Brussels sprouts to a serving platter. Garnish with fresh chopped parsley, if desired.
