Preheat your oven to 500°F. Place the pre-made pizza dough on a clean wooden cutting board.

Using a bench scraper or a sharp knife, divide the pizza dough into 12 equal pieces.

Prepare a 12-cup muffin pan by generously spraying each cup with nonstick cooking spray.

Place one piece of dough into the bottom of each muffin cup. Press the dough down firmly to form a flat base that covers the bottom of the cup.

Add a spoonful of pizza sauce on top of the dough in each muffin cup. Sprinkle a pinch of crushed red pepper flakes over the sauce in each cup.

If using, sprinkle a small amount of grated Pecorino Romano cheese over the sauce in each cup.

Place several slices of pepperoni on top of the Pecorino cheese (or directly on the sauce if not using Pecorino). If using, add a few diced jalapeño pieces to each cup.

Add a generous amount of shredded low-moisture mozzarella cheese to each cup, ensuring it covers the pepperoni and jalapeño layers.

Place a few more slices of pepperoni on top of the mozzarella cheese layer in each cup.

Carefully transfer the muffin pan to the preheated oven and bake for 12 to 15 minutes, or until the edges are golden brown and crispy, and the cheese is bubbly.

Once baked, remove the pizza bites from the oven. Allow them to cool in the pan for a few minutes. Use a knife to carefully loosen the edges of each pizza bite from the muffin pan.

Invert the entire muffin pan over a wooden cutting board or serving platter to release the pizza bites. Stack them as desired.

Drizzle the finished pizza bites generously with hot honey before serving. Enjoy while warm!
