Slice the fresh strawberries.

Place the sliced strawberries in a small saucepan. If using, add the 1/2 vanilla bean for extra flavor.

Cook the mixture over medium-low heat for about 10 minutes, stirring occasionally, until the strawberries soften and break down.

Remove the saucepan from the heat. Add the chia seeds to the strawberry mixture and stir well to combine.

Carefully transfer the hot jam mixture to a sterilized jar. If desired, you can add a sweetener to taste at this stage.

Let the jam cool to room temperature, then refrigerate for at least 2 hours, or preferably overnight, to allow it to set.

Store the homemade jam in the refrigerator for up to 5 days. This recipe can also be made with other types of fruit.
