Gather all the fresh herbs and aromatics: cilantro, green onions, shallot, Thai chilies, Thai basil, and culantro leaves. Roughly chop the larger items to prepare them for the food processor.

Add the cilantro, green onions, shallot, Thai chilies, Thai basil, and culantro leaves to a food processor.

Add the wet ingredients and seasonings to the food processor: lime juice, fish sauce, granulated sugar (start with 1/2 tablespoon), and garlic oil.

Pour 1/4 cup of avocado oil into the food processor.

Blend all the ingredients in the food processor until mostly smooth, but still with some texture. Add more avocado oil, 1 tablespoon at a time, if a thinner consistency is desired. Do not add the fried garlic bits or fried shallots yet.

Once blended, transfer the chimichurri sauce to a serving bowl.

Stir in the fried garlic bits and fried shallots into the blended sauce. This step is to keep the sauce a little chunky and add textural contrast.

Taste the sauce and adjust the lime juice, fish sauce, and granulated sugar according to your preference. If you prefer it sweeter, add the remaining 1/2 tablespoon of sugar.

The sauce can be eaten immediately and is delicious. For an even better flavor, cover and refrigerate for at least 1 hour to allow the flavors to meld.

If serving with steak: Season the steak generously with Sergio seasoning (or your preferred steak seasoning).

Cook the steak to your desired doneness, basting with butter during the cooking process for added richness.

Serve the cooked steak with a generous amount of Asian-Style Chimichurri poured over it. This sauce is also excellent with chicken, seafood, or even rice.
