To make the wonton filling, combine the pork mince, prawns, grated ginger, finely sliced spring onions, rehydrated and chopped shiitake mushrooms, oyster sauce, sesame oil, chicken bone broth concentrate, and cornflour in a medium-sized bowl.

Mix all the filling ingredients well until thoroughly combined.

Lay out the wonton wrappers. Place a spoonful of the prepared filling into the center of each wonton wrapper.

Lightly wet the edges of each wonton wrapper with water using your finger. Fold and seal the wontons tightly into your desired shape.

For the soup, add 1.5 liters of water to a large pot.

Stir in 2 to 3 tablespoons of chicken bone broth concentrate, 1 tablespoon of light soy sauce, and 1 teaspoon of sesame oil into the water.

Bring the soup mixture to a gentle simmer over medium heat.

While the soup simmers, cook the egg noodles according to the packet instructions. Once cooked, drain them and divide them evenly among four serving bowls.

In the same pot used for the noodles, blanch the bok choy or choy sum for 30 seconds. Remove and divide the blanched greens among the serving bowls with the noodles.

Gently place the prepared wontons into the simmering broth. Cook for 4 to 5 minutes, or until they float to the surface and are cooked through.

Ladle the cooked wontons and hot broth over the noodles and greens in each serving bowl.

Finish each bowl with fresh coriander and a drizzle of chilli oil, if desired.
