Preheat your oven to 375°F. Bring a large pot of salted water to a boil. Cook the ziti pasta according to package directions until al dente. Drain well and set aside.

While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped yellow onion and cook until softened, about 3-4 minutes.

Add the minced garlic to the skillet and cook for another minute until fragrant. Stir in the crushed tomatoes and dried oregano. Bring the sauce to a simmer, then reduce heat to low and let it cook for 10 minutes, stirring occasionally.

Stir the fresh spinach into the tomato sauce until it wilts, about 2-3 minutes. Season the sauce with salt and black pepper to taste.

In a medium bowl, combine the ricotta cheese, egg, chopped fresh parsley, 1 cup of shredded mozzarella cheese, and 1/4 cup of grated Parmesan cheese. Season with a pinch of salt and pepper and mix well.

In a large mixing bowl, combine the cooked ziti pasta with the tomato and spinach sauce. Gently fold in the ricotta cheese mixture until everything is well combined.

Transfer the pasta mixture to a 9x13 inch baking dish. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese and 1/4 cup of grated Parmesan cheese evenly over the top.

Bake for 25-30 minutes, or until the cheese is melted and bubbly and the edges are lightly golden. Let the ziti bake rest for 5 minutes before serving.
