Finely chop the 70% dark chocolate bar. The finer the chop, the smoother and quicker it will melt into the hot chocolate. Set aside.

In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, and salt. Place the pot over medium heat.

If using, add the optional espresso to the milk mixture.

Whisk the liquid mixture constantly. Heat until it begins to foam around the edges, but do not allow it to boil. This should take about 5-7 minutes.

Once the milk mixture is foamy and hot, remove the saucepan from the heat. Add all of the finely chopped dark chocolate to the hot liquid.

Whisk continuously until all the chocolate has completely melted and is well combined, creating a smooth, rich, dark brown liquid.

Stir in the vanilla bean paste until fully incorporated.

Return the saucepan to low heat and continue to stir gently for another 2-3 minutes, allowing the hot chocolate to thicken to your desired consistency. It should coat the back of a spoon or spatula.

Remove the hot chocolate from the heat. Pour into individual mugs.

Top each serving with a generous dollop of whipped cream and garnish with chocolate shavings.
