Prepare the aromatics: Peel and mince the 4 cloves of garlic. Peel and mince the 1-inch knob of ginger. Chop the 3 scallions.

Combine the sauce ingredients: In a medium bowl, combine the soy sauce, 1/2 cup water, brown sugar, minced garlic, chopped scallions, minced ginger, rice vinegar, and sesame oil. Whisk all ingredients together until the brown sugar is dissolved and everything is well combined.

Marinate the chicken: Place the chicken thighs into a resealable bag or a shallow dish. Pour about 3/4 of the prepared Yaki sauce over the chicken, ensuring it's well coated. Reserve the remaining 1/4 of the sauce for later thickening. Marinate the chicken for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.

Grill the chicken: Preheat your grill to medium-high heat. Grill the marinated chicken thighs for 5-7 minutes per side, or until cooked through and nicely charred. The internal temperature of the chicken should reach 165°F (74°C).

Prepare the thickening slurry: While the chicken is grilling, in a small bowl, combine the corn starch and 1 tablespoon of water. Whisk until smooth to create a slurry.

Thicken the reserved sauce: Pour the reserved Yaki sauce into a small saucepan and bring it to a simmer over medium heat. Once simmering, slowly whisk in the prepared corn starch slurry. Continue to whisk constantly for 1-2 minutes until the sauce thickens to your desired consistency.

Serve: Once the chicken is cooked, remove it from the grill. Brush the thickened Yaki sauce generously over the grilled chicken. Serve immediately.
