In a small bowl, combine the oyster sauce, soy sauce, dark soy sauce, fish sauce, sugar, white pepper, and water. Mix all the ingredients well until the sugar is dissolved and the sauce is thoroughly combined. Set aside.

Heat 1 tablespoon of oil in a wok or large pan over high heat. Add the thinly sliced chicken breast to the hot wok and stir-fry until it is cooked through, approximately 2-3 minutes. Once cooked, remove the chicken from the wok and set it aside.

Add the remaining 1 tablespoon of oil to the same wok. Add the minced garlic and sliced Thai chilies. Stir-fry for 30 seconds until the aromatics become fragrant.

Add the sliced onion and red bell pepper to the wok. Continue to stir-fry for 1-2 minutes until they are slightly softened.

Return the cooked chicken to the wok along with the chopped Chinese broccoli. Stir-fry for 1 minute to integrate the flavors.

Add the fresh wide rice noodles to the wok. Pour the prepared sauce mixture evenly over the noodles and other ingredients. Toss everything gently to ensure all ingredients are well combined and the noodles are evenly coated with the sauce.

Continue to stir-fry the mixture for another 2-3 minutes. During this time, ensure the noodles are heated through and develop a slight char for extra flavor.

Add the fresh basil leaves to the wok. Toss quickly for 15-30 seconds until the basil leaves are wilted.

Transfer the Drunken Noodles immediately to serving plates and enjoy.
