In a heatproof bowl, slightly beat the egg yolk. Add the granulated sugar and a pinch of salt to the beaten egg yolk. Whisk until well combined and slightly pale.

To the egg yolk mixture, add the sieved ripe papaya, calamansi juice, scalded milk, and cornstarch. Whisk all ingredients thoroughly until no lumps of cornstarch remain and the mixture is smooth.

Set up a double boiler. Pour the custard mixture into the top part of the double boiler. Cook over simmering water, stirring constantly with a whisk or rubber spatula, until the custard thickens to a pudding-like consistency. This will take approximately 10-15 minutes.

Just before removing the custard from the heat, stir in the vanilla extract. Remove from the double boiler and serve warm or chilled.
