Prepare the enoki mushrooms by trimming off the very bottom, root end. Gently separate the mushroom clusters into smaller, manageable portions. If the mushrooms are very long, you can cut them in half.

In a medium saucepan, combine the soy sauce, mirin, sake, granulated sugar, rice vinegar, dashi powder (if using), and water. Whisk well to dissolve the sugar and dashi powder.

Bring the sauce mixture to a gentle simmer over medium heat. Once simmering, add the prepared enoki mushrooms to the saucepan.

Reduce the heat to low and simmer the mushrooms, stirring occasionally, for 10-15 minutes, or until the mushrooms have softened and absorbed most of the liquid. The sauce should reduce and thicken slightly, coating the mushrooms.

Remove from heat. Nametake can be served warm or at room temperature over plain steamed rice. It can also be stored in an airtight container in the refrigerator for up to 5-7 days.
