Preheat your oven to 375°F. Line a large baking sheet with parchment paper and lightly grease it with olive oil.

In a large mixing bowl, combine the finely grated carrots, finely diced yellow onion, lightly beaten large egg, plain breadcrumbs, all-purpose flour, finely grated Parmesan cheese, salt, and freshly ground black pepper. Mix thoroughly until all ingredients are well combined and form a cohesive mixture.

Lightly flour a clean work surface. Take a portion of the carrot mixture and flatten it to about 1/2-inch thickness. Use a 2-3 inch star-shaped cookie cutter to cut out the carrot stars. Carefully transfer the stars to the prepared baking sheet. Repeat with the remaining mixture, gathering and re-flattening scraps as needed.

Lightly brush the tops of the carrot stars with the 1 tablespoon of olive oil. This will help them brown nicely and achieve a slightly crispy exterior.

Bake the carrot stars for 18-22 minutes, or until they are golden brown and firm to the touch. Flip them halfway through baking for even browning, if desired.

While the stars are baking, prepare the optional dill yogurt dip. In a small bowl, whisk together the plain Greek yogurt, finely chopped fresh dill, freshly squeezed lemon juice, and salt until smooth.
Remove the Hidden Veggie Carrot Stars from the oven and let them cool on the baking sheet for a few minutes before serving. Serve warm with the optional dill yogurt dip on the side.
