In a mixing bowl, combine the warm milk, sugar, and instant yeast. Stir quickly and let it stand for a few minutes until the mixture becomes slightly foamy. Then, beat in the large eggs and add the vanilla extract (if using).

Add the all-purpose flour and a pinch of salt to the wet mixture. Stir everything together until a shaggy dough forms.

Begin kneading the dough. Gradually incorporate the softened unsalted butter in small portions, continuing to knead until the dough becomes smooth, stretchy, and elastic.

Transfer the kneaded dough to a lightly oiled bowl. Cover the bowl and let the dough rise in a warm spot until it doubles in size, which should take approximately 1 hour. A warm, steamy oven can help to speed up this process.

Once the dough has risen, gently deflate it. Portion the dough into 12 equal pieces and shape each piece into a round ball.

Flatten each dough ball into an oval or rectangular shape. Spread a layer of Nutella over the surface, leaving a small border around the edges.

Fold the dough over the Nutella filling. Cut slits along one side of the folded dough and then twist or wrap them over to create a braided effect.

Arrange the shaped rolls on a baking tray lined with parchment paper. Cover them loosely and let them rise again until they appear soft and puffy, which will take about 30–45 minutes.

Preheat your oven to 180°C (350°F). Brush the tops of the risen rolls with an egg wash. Bake in the preheated oven for roughly 18–20 minutes, or until they are golden brown and cooked through.

While the brioche rolls are still warm from the oven, lightly brush their tops with melted butter before serving.
