To start, brew a strong ginger tea by combining the 1/2 cup chopped ginger and 4 cups water in a saucepan. Bring to a simmer over medium heat and continue to simmer for 15 minutes.

Remove the ginger tea from the heat and let it cool completely to room temperature. This will take approximately 1 hour.

Once the ginger tea has cooled, strain out the ginger solids if desired (optional, but recommended for a smoother drink). Then, add the juice of 2 limes or lemons, 1/2 cup honey or sugar of choice, and 1/2 cup active ginger bug to the cooled tea. Stir well to combine.

Carefully pour the mixture into a clean swing-top bottle. Let the mixture sit at room temperature for a few days, burping daily by briefly opening the bottle to release pressure, until your desired carbonation is reached. This process can take 2-3 days.

Once carbonated to your liking, chill the ginger beer in the refrigerator for at least 4 hours before serving. Enjoy!
