Cut the boneless chicken thighs into bite-sized pieces, approximately 1-inch cubes.

Place the cut chicken pieces in a medium-sized bowl. Add the soy sauce, oyster sauce, ginger, and cornstarch to the bowl.

Mix all the ingredients well until the chicken pieces are evenly coated with the marinade. Ensure every piece is covered.

Heat the cooking oil in a large pan or skillet over medium heat. Allow the oil to become hot, shimmering slightly but not smoking.
