Preheat your oven to 180°C.

Heat 1 tablespoon of olive oil in a 26 cm oven-safe pan over medium-high heat.

Add the 250 grams of diced chicken thigh to the pan and cook until it is golden brown. Remove the chicken from the pan and set it aside.

Add the 1 diced brown onion to the same pan and cook until it has softened, which should take approximately 3-4 minutes.

Add the 2 minced garlic cloves, 1 teaspoon of dried oregano, and 1/2 teaspoon of dried chilli flakes to the pan. Cook for 1 minute until fragrant.

Pour in the 400 grams of crushed tomatoes and 1/2 cup of chicken stock. Bring the mixture to a simmer.

Stir in 1 tablespoon of gochujang and 1/2 cup of cream. Mix thoroughly to combine all ingredients.

Add the 500 grams of gnocchi to the sauce and stir until it is well coated. Season the mixture with salt and pepper to your taste.

Return the cooked chicken to the pan, nestling it into the gnocchi and sauce.

Generously top the dish with 1 cup of grated mozzarella and 1/2 cup of grated Parmesan.

Transfer the pan to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly and the gnocchi is tender.

Garnish with fresh chopped parsley before serving.
