Combine all tortilla wrap ingredients (oats, chia seeds, egg, salt, and water) into a blender.
Blend the mixture until it is completely smooth and no oat pieces are visible.

Pour the batter into a bowl or back into the blender pitcher and let it rest for 5 minutes. This allows the chia seeds to absorb liquid and thicken the batter.

Heat a non-stick pan over medium heat. Once hot, pour a portion of the batter (approximately half for two tortillas) into the pan, swirling to form a thin, round tortilla.

Cook the tortilla for 2-3 minutes, or until the edges begin to crisp and the surface appears set. Carefully flip the tortilla with a spatula and cook for another 1-2 minutes on the second side, until lightly browned and pliable.

Remove the cooked tortilla from the pan and repeat with the remaining batter. Place the cooked tortillas on a plate or cutting board.

Lay a cooked tortilla flat. Add your desired fillings such as lettuce, scrambled egg, sliced tomato, and a dollop of cream cheese or Greek yogurt. If desired, add a squeeze of mayonnaise.

Fold the sides of the tortilla over the fillings, then roll it up tightly to create a wrap. Serve immediately, optionally cut in half.
