Season the chicken wings generously with Cajun seasoning. Place them in a bowl or resealable bag and marinate in the refrigerator overnight, if possible, or for at least 30 minutes.

In a medium bowl, whisk together the egg, cornstarch, and water until well combined and smooth.

Add the marinated wings to the egg and cornstarch mixture. Toss everything together until each wing is evenly coated.

Heat at least 2 inches of vegetable oil in a large pot or deep fryer to 325°F. Carefully add the coated wings to the hot oil, being careful not to overcrowd the pot. Fry for about 10 minutes, or until the wings are cooked through and begin to float.

Remove the wings from the oil and place them on a wire rack set over a baking sheet to drain excess oil. Increase the oil temperature to 375°F.

Once the oil reaches 375°F, return the wings to the hot oil for a second fry. Fry for 1 to 2 minutes, or until the wings are golden brown and extra crispy.

While the wings are frying, prepare the salt and pepper mix. In a small bowl, combine the salt, granulated sugar, MSG, and pepper flakes. Mix thoroughly.

As soon as the crispy wings come out of the oil, immediately transfer them to a large mixing bowl. Sprinkle generously with the prepared salt & pepper mix, sliced jalapeños, and sliced green onions. Toss well to ensure all wings are evenly coated.
