In a large mixing bowl, combine the 300g chicken mince, 200g spinach, 100g crumbled feta, 1 egg, 1 tablespoon flour, salt, and pepper.

Using your hands or a spoon, mix all the ingredients together thoroughly until well combined and uniform.

Take small portions of the mixture, about 1 1/2 tablespoons each, and roll them into small balls.

Gently flatten each ball to form fritters, approximately 1/2 inch thick.

Heat a large non-stick pan over medium heat and add 2 tablespoons of olive oil.

Once the oil is hot, carefully place the fritters into the pan, ensuring not to overcrowd it. You may need to cook them in batches.

Cook the fritters for 4-5 minutes on one side until golden brown and cooked through about halfway. Then, carefully flip them.

Continue cooking for another 4-5 minutes on the second side until they are golden brown and cooked through completely. The internal temperature should reach 165°F (74°C).

Remove the cooked fritters from the pan and place them on a plate lined with paper towels to absorb any excess oil. Serve immediately and enjoy!
