Preheat your oven to 385°F. Lightly grease a mini muffin tin with cooking spray.

Unroll the crescent roll dough onto a clean cutting board. Using a pizza cutter or sharp knife, cut the dough into approximately 24 small, roughly square pieces.

Carefully place each small square of crescent dough into a mini muffin cup, pressing it down gently to form a small cup or shell.

Place one small cube of brie cheese into the center of each crescent dough cup.

Spoon a small dollop of red pepper jelly on top of the brie in each cup.

Bake in the preheated oven for 15 minutes, or until the crescent dough is golden brown and the brie and jelly are bubbly.

Remove from the oven and allow to cool slightly in the muffin tin before carefully transferring to a serving platter. Serve warm.
