Preheat your oven to 350°F. Grease and flour a 9x13 inch baking dish.

Place the chopped dates in a medium bowl. Add the baking soda and pour the hot water over the dates. Stir gently and let them soak for 10 minutes.

In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Add the soaked date mixture (including the soaking liquid) to the batter and mix until fully incorporated.

Pour the cake batter into the prepared baking dish and spread evenly.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the toffee sauce. Combine the heavy cream, brown sugar, and unsalted butter in a medium saucepan.

Bring the mixture to a boil over medium heat, stirring constantly. Reduce the heat and simmer for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

Once the cake is removed from the oven, poke holes all over the top of the warm cake using a skewer or a fork.

Pour approximately half of the warm toffee sauce over the cake, allowing it to soak in.

Serve the sticky toffee pudding warm, topped with additional toffee sauce and a scoop of vanilla ice cream.
