Rinse the 1 lb dry pinto beans thoroughly under cold water.

Add the rinsed pinto beans to an Instant Pot.

Add the 1/2 lb ham hock, 1 tablespoon chicken bouillon, 1 teaspoon cumin, 1 teaspoon salt, 1 teaspoon pepper, and 6 cups water to the Instant Pot with the beans.

Close the lid of the Instant Pot, set the vent to sealing, and set it to high pressure for 60 minutes. Allow for natural pressure release once cooking is complete.

While the beans are cooking, chop the 1/2 lb bacon into small pieces.

Cook the chopped bacon in a large pan over medium heat until it is crispy. Remove the cooked bacon from the pan with a slotted spoon, leaving some of the rendered bacon fat in the pan. Set the crispy bacon aside.

Chop the 1/2 onion.

Add the chopped onion to the bacon fat in the pan and cook until the onion is translucent, stirring occasionally.

Mince the 4 cloves of garlic.

Add the minced garlic to the pan with the onions and cook for 1 minute, stirring constantly, until fragrant.

Chop the 1/2 cup cilantro.

Add the 1/2 cup salsa and the chopped cilantro to the pan with the onion and garlic mixture. Mix well and cook for another 2-3 minutes to meld the flavors.

Once the beans are cooked and the Instant Pot has naturally released pressure, carefully open the lid. Remove the ham hock from the pot.

Shred the meat from the ham hock, discarding any bones or excess fat.

Add the shredded ham hock meat and the cooked crispy bacon back into the beans in the Instant Pot.

Add the salsa mixture from the pan to the beans in the Instant Pot. Stir all ingredients together thoroughly to combine. Serve hot.
