Peel the fresh ginger.

Slice the peeled ginger into thin pieces.

Lightly score the whole jujubes, keeping the seeds in.

Add 15 cups of water to an Instant Pot.

Add the 75g of peeled and sliced fresh ginger to the Instant Pot.

Add the 60g of lightly scored whole jujubes to the Instant Pot.

Place a tempered glass lid on the Instant Pot.

Turn on the SAUTÉ HIGH function for 10 minutes.

Switch to SAUTÉ LOW for 90 minutes.

Mash the softened jujubes in the pot and stir.

Switch back to SAUTÉ HIGH. The Instant Pot will say “preheating” but do not wait for it to preheat. Immediately start a separate 5-minute timer and let the tea gently simmer during that time.

Turn off the Instant Pot.

Strain out the ginger and jujube solids from the tea.

The tea can be kept on the "Keep Warm" setting in the Instant Pot to sip throughout the day, or stored in the fridge and reheated during the week.
