Preheat the oven to 400°F. Add the cherry tomatoes, sliced zucchini, thinly sliced shallot, and peeled garlic cloves to a 9x13 inch baking dish. Place the 5.3 ounce package of Boursin cheese in the center of the dish.

Drizzle the contents of the baking dish with 1 tablespoon of olive oil. Season with 2 teaspoons of Italian seasoning, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of red pepper flakes (if using). Bake in the preheated oven for 30–35 minutes, or until the tomatoes have burst and the vegetables are tender.

While the vegetables are baking, cut the 2 pounds of chicken breasts into bite-sized pieces. Season the chicken with 1 1/2 teaspoons of garlic powder, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.

Cook the seasoned chicken in a large skillet over medium-high heat for 7–10 minutes, or until it is browned and cooked through. Set aside.

Cook the 10 ounces of rigatoni pasta according to package directions until it is just al dente. Drain well.

Once the baking dish is removed from the oven, use a fork or potato masher to burst the roasted tomatoes. Mash the roasted garlic and Boursin cheese together directly in the baking dish, being careful to leave most of the zucchini intact.

Add the cooked pasta and cooked chicken to the baking dish. Stir in 1/4 cup of fresh chopped basil and the juice of one lemon. Toss all the ingredients until everything is well coated in the creamy roasted tomato sauce.

Serve immediately or portion into containers for meal prep.
